V. M. Salgaocar Institute for International Hospitality Education (VMSIIHE) recently conducted a one day workshop on cake decoration, confectionery and baking for the teaching staff of Damodar College of Commerce and Economics.
A group of fifteen enthusiastic teachers underwent a short intensive training in baking of variety of cakes, confectionery and decoration of cakes.
The workshop was led by Chef Rodwin Rodrigues, Assistant Chef, VMSIIHE under the able guidance of Chef Stefan Jerkfelt. Chef Stefan Jerkfelt has recently moved from Sweden to Goa to train the students at VMSIIHE in the culinary art. Two sessions were conducted. The first session included a demonstration on cake making and chocolate making by Chef Rodwin while the second session included a session of cake decoration and making fondant.
The group of 15 teachers who attended the workshop began their day with an introduction to the Institute, its faculty and students. After welcome drinks and a quick tour of the facilities, the ladies were The bakery workshop was an interactive hands-on experience where the participants learnt to the finer nuances of the art of culinary baking.
At the end of the intensive daylong session, participation certificates were distributed to the teachers in the presence of Prof. Irfan Mirza, Director, VMSIIHE; Martha Rebello, Coordinator,VMSIIHE; Chef Stefan Jerkfelt; Chef Sujatha Madhavan and other faculty members.
